What you'll learn in this cooking techniques class:

We are thrilled to announce this special demonstration and book signing, the legendary cookbook author, Peter Reinhart whom is widely acknowledged as one of the world’s leading authorities on bread. 

In 2002, Reinhart embarked on a two-year pizza quest trekking through America and Italy in search of the perfect pie, which he chronicled in his book, American Pie: My Search for the Perfect Pizza. He found that “there’s a big difference between good (about 99 percent of pizza out there) and very good (1 percent)” – and a lot of that is due to the crust. Since 2010, he has been the host of pizzaquest.com, where he shares videos, blog entries, and recipes on his never-ending search for the perfect pizza, and also explores pizza as a metaphor for the universal search for meaning and self-discovery.

Peter will be debuting his brand new book Perfect Pan Pizza: Square Pies to Make at Home, from Roman, Sicilian, and Detroit, to Grandma Pies and Focaccia. He will focus the demo on two types of Detroit-style (Classic Red-Stripe and Pepperoni Delux) as well as Focaccia with Herbed Tomatoes and Pesto. He will also demo Sicilian style pan pizza The demo will be how to make the dough and then we can top and bake the pizzas/focaccias.

  • There will be Q&A as well as a book signing – everyone will receive a copy of the book to have signed!
