Satisfy your favorite meat-lover with a new twist on the classic Chicago-style steak. Join our Chefs as they guide you through Meat 101 basics, then take off on an international journey of classic meat preparations from around the world.


  • Chili-Lime Rubbed Grilled Hanger Steak with Chipotle Butter and Elotes (Grilled Corn, Lime and Queso Fresco)
  • Crispy Pork Chops Milanese with Tomato, Lemon and Arugula Salad
  • Lamb Gyros Burger with Cucumber, Feta and Yogurt Sauce 
Skills Covered in Class Include:

  • Selecting Cuts of Beef, Pork and Lamb
  • Determining Meat Doneness
  • Working with Herbs, Spices, Legumes and Tomatillos
  • Searing Steak; Roasting Lamb
  • Braising Pork
  • Making Pan Sauce and Breadcrumb Crusts.

Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people.

Refund Policy
A one-week notice is required for cancellation of any class. If you do not cancel by telephone at least 1 week in advance of your scheduled class, we will charge your credit card in full for the class. Please feel free to send a friend in your place if you cannot attend and it is within one week of the class as no refunds will be available. All classes also have a non-refundable, non-transferable 10% fee for the operational and administrative costs incurred by The Chopping Block. This service fee will not be refunded and cannot be transferred in the case of any cancellation.
