Chef John

Teaches at CocuSocial Cooking Classes

A Marin County chef, and founder of “Indigenous Edibles”, he is also a lecturer, cooking instructor, native plant specialist, and food educator. John have been cooking with ingredients native to The Americas, for over 10 years. He is one of the few Bay Area chefs who specialize in the history, taste, and promotion of California’s, and The Americas’ indigenous, edible plants. He had the honor of cooking for Carlo Petrini, founder of Slow Foods International, Actor Peter Coyote, Members of Congress, and local indigenous organizations. His long-term goal is to help reestablish and source from Heritage Foodways.

    Amazing! Thanks so much to the crew at Alice’s Tea Cup for helping us learn the best tricks to baking scones in such a great atmosphere! Will definitely sign up for another class soon. Also, get to bring home so many delicious treats is a great perk.

    The cake and frosting provided to you in class were delicious. The the critiques that I have are: - I felt extremely rushed. There wasn't a lot of time to work with the tools and frosting. - There wasn't a whole lot of direction or a lot of options. I expected to learn some piping techniques but I only learned one. I guess I expected more variety in the teaching but I guess there's only so much you can do in 2 hours. I did have fun and enjoyed the instructors that saved it for me.

    The class was very enjoyable . I gave four star because of the recipes. Recipes were not clearly stated. What kind of oven. Not everyone has a convection oven. State over temp on both kind of oven. The buttermilk used on scones - low fat or full fSt. I would like an answer to this
