Amazing and informative. Had a great time. Christine was awesome
  • Intro to Macarons

The instructor (Kavina) and the level of information were both good. But the course failed on many other levels. The equipment was sparse. The bowls were too small to mix the dough, and the squeeze bottles with food color sometimes required a hard squeeze for a single drop, but then produced a puddle with the next squeeze. The exterior of the bottles hadn’t been cleaned, so I ended up with indelible blue dye all over my hands. But worst of all, two stand mixers for 12 students was inadequate. It also meant that too much time was wasted as the instructor had to divide two large batches of meringue into six portions each. And how might that lost time have been put to use? Almost every student’s macaron shells were underbaked. They needed to be in the oven longer. It was a shame to watch so many of us trying in vain to peel silpat off the shells. Last but not least was the quality of the fillings. Nutella and strawberry preserves right from the jars? I assume the lemon curd was also commercial. Are you kidding? An equally important part of making good macarons is making great fillings. These were awful. And what time did we finish? My wife and I were done at 5:05 (after a 3 pm start) although the class was billed at running until 5:30.

I had the best time at this class! I learned so much about the art and science behind my favorite cookie. I truly feel like I have the confidence to make these on my own in the future. What more could you want out of a baking class? It was so well run. The instructor was knowledgable and so helpful at every step of the process. If you've never made macarons before (or you have tried and failed, like me!), this class will be perfect.
